Summer BBQ Steak Rubs

It’s barbecue season again, our favorite! We’re breaking out the steaks this summer here in Los Angeles! When it comes to barbecue, some chefs are purists, using only salt, enhanced by fire and fat caramelization of the given cut of meat to bring out the natural flavors. Though we can absolutely get behind this for a fresh cut, sometimes a good steak rub can be the flavor punch to wow guests (and your tastebuds) at a summer barbecue. The seasonings will add a scrumptious crust and depth of flavor to your steak, making it a hit at any summer gathering. The best part is, those seasoning rubs can be used on meat substitutes and vegetables just as well.

Smoky Coffee Rub

This recipe includes a whirlwind of complimentary dark flavors such as coffee, cocoa, and sumac! Dark coffee and steak have a magic bond when cooked together, tenderizing the outside and complimenting the roasted flavors from classic wood or charcoal grilling.  Many chiles have a natural bitterness, which works with the coffee and cocoa powder in this rub. Sumac has a tart, acidic flavors reminiscent of fresh lemon zest, brightening the flavors of the seasoning and the beef. 

Makes about 1/2 cup

INGREDIENTS
2 tablespoons kosher salt
1 tablespoon fresh ground black pepper
1 tablespoon ground espresso coffee
1/2 tablespoon ancho chili powder
1/2 teaspoon ground sumac
1 teaspoon granulated garlic
1 teaspoon Dutch process cocoa powder
1/2 teaspoon ground cinnamon

INSTRUCTIONS

  1. Combine all ingredients in a small bowl.

  2. Stir well to distribute the ingredients.

  3. Store at room temperature in a sealed container for up to 2 months.

  4. The fresher the ground coffee, the longer it will last.

Try this rub on any type of steak, such as rib eye, filet mignon, prime rib, or even a Portobello mushroom. To use this or any seasoning mixture, generously coat your steak with the rub of your choice, making sure to press it into the meat for best results. Allow the steak to sit with the rub for at least 30 minutes to allow the flavors to infuse. Heat up your grill to high heat and cook your steak to your desired doneness. Voila!
