BLUEBERRY LEMON RICOTTA TOAST
Enjoy this summer toast as a treat for yourself or to share with your friends at a brunch potluck or afternoon garden party appetizer. It’ll help brighten up the June gloom! Mention this blog for your next event and get this appetizer free with your next Taste and Company Catering order!
Ingredients:
French or Italian Baguette or Fresh Sourdough
1 cup Fresh Ricotta
A Pint of Blueberries
2-3 tsp Lemon Zest (from apprx 1 organic lemon)
Honey to drizzle
Fresh Thyme
Instructions:
1. Zest 3 tsp lemon peel
2. Mix 2 teaspoons lemon peel into the ricotta, let sit for 15 min
3. Slice your baguette, toast at 450º F for 5 minutes, or until slightly golden brown
4. Spread ricotta on the toast
5. Place blueberries on ricotta
6. Drizzle with your favorite honey
7. Sprinkle with more lemon zest and thyme
8. ENJOY!
BONUS: If you really want to amp it up, take some of the blueberries, boil with the honey and drizzle on top! Make small toasties for your next party!
