Valentine’s Day Cake Pops

SPECIAL TOOLS
sheet pan
foam block

INGREDIENTS
Two 8-inch cakes
¾ cup frosting
Three 12-ounce bags of candy melts.
Coconut oil or vegetable shortening
30-40 lollipop sticks
Sprinkles and other fun toppings.

CAKE TIME!

  1. Bake your favorite flavor cake either from scratch or from a box.

  2. Let the cake cool for 15 minutes

  3. Break the cake up into a bowl into crumbles.

  4. Mix in frosting a little at a time to the crumbles until a dense but crumbly dough forms.

  5. Refrigerate for 15 minutes.

  6. Either take two-inch scoops and form balls or heart shapes by hand, OR roll out the dough with a rolling pin over parchment paper and use a heart shaped cookie cutter to create the shapes.

  7. Carefully poke a lollipop stick into the bottom of each heart and place on a baking sheet lined with parchment paper or upright into a foam block.

  8. Freeze for 1 hour.

DIPPIN’ TIME!

  1. Simmer a pot of water and place a heat-safe bowl on top. Place your candy melts in the bowl and melt. (You can also use a microwave to melt them.) You may need to add 1 teaspoon of shortening or coconut oil to help with consistency.

  2. Remove cake pops from the freezer and gently dip into the melted chocolate. Let the excess drip off. (Let pops set before dipping again if you like a thicker coat.)

  3. Add sprinkles, nonpareils or other fun toppings.

  4. Replace back onto foam block to set. Store in the refrigerator until serving.
